My family's favorite camping recipe is the foil dinnet.

It is very easy, very delicious and a snap to clean up.

You need a campfire or a grill to cook this.

Foil Dinner (this makes one portion)

1/2 carrot sliced
1/2 potato sliced
one portion of chicken,
light or dark meat to taste
1/4 onion sliced
1/2 clove garlic minced
1/2 stalk celery sliced
1/2 tsp of your favorite seasoning (thyme, rosemary, oregano, etc.)
small pat of butter or 1 Tbs oil Spread out a generous piece of aluminum foil.

Place the pat of butter or the oil in the center of the foil.

Add the veggies and potatoes and place the chicken portion on top of the veggies.

Sprinkle the whole thing with the seasonings of your choice plus the salt and pepper.

Wrap the whole meal tightly in the foil, folding over the edges to make a tight seal.

Place in the coals of the campfire or on the grill and cook for approximately 40 minutes.

Do not open the foil packet until the time is up. When the time is up, you can place the foil packet on a plate, open it up carefully because steam will be released, and enjoy a juicy, complete chicken dinner. salt & pepper to taste
